ohhh I love copper pots.

Hello Karin -- the beauty of copper, apart from the look of it, is that it conducts heat very very efficiently. So a saucepan of water e.g. boils in the blinking of an eye, and you have far more control over gastronomic time and space - remove from heat and it cools quickly, put on heat and it warms almost instantaneously.
